This dessert from Mimi Thorisson’s recipe is spectacular. I love the combination of flavors and textures: pistachio, strawberry, crunchy, creamy, light and decadent all at once. The recipe begins with making the meringues. Confession: I usually do not enjoy meringues. I’ve always found them to be too sweet for my taste. These are different…they are the most magical, tender, melt in your mouth treats!
I made the meringues a day before serving them. They take an hour and a half to bake, so it was nice to have them prepared ahead of time. Mimi mentions the option to color them pink with food coloring….how could I resist? I do love colorful things! They reminded me of something out of Candyland or Willy Wonka. I love it!
The trickiest thing about this dessert is that the sabayon must be made right before serving it. It also requires an ingredient called pistachio paste, which I ordered online since I’ve never seen it in the grocery store. There are also recipes online for making your own. My sabayon did not turn out as pretty as Mimi’s, but it was decadent and delicious. I chose to serve this dish with vanilla ice cream added to it because it was a very warm summer evening. The end result: spectacular.
