Strawberry Lemonade Freezer Jam

It’s berry season! Freezer jam is a wonderful way to capture the delicious flavor of freshly picked strawberries.  I love this recipe because it’s easy, fast and doesn’t require any cooking.  I am fortunate to live in Oregon where the strawberries are sweet and full flavored.  The little bit of sour added by the lemon gives a nice balance to the sweetness of the berries.  It also works well with raspberries.


Strawberry Lemonade Freezer Jam

Total Time: 40 minutes

Yield: 32 oz or 4 half pint containers of jam


  • 3 1/3 Cups mashed Strawberries
  • Juice from one small lemon- about 2 1/2 Tbsp
  • 1 1/3 Cups granulated sugar
  • 2 Tbsp Ball RealFruit instant pectin


  1. Wash, hull and mash fresh strawberries to measure 3 1/3 Cups. It works best to mash small amounts at time. I like to leave a lot of chunks of berry in mine.
  2. Add 2 generous Tbsp fresh lemon juice to the berries.
  3. Mix together 1 1/3 Cups granulated sugar and 2 Tbsp instant pectin in a large mixing bowl.
  4. Stir berry mixture into the sugar mix and continue stirring for 3 minutes.
  5. Ladle jam into clean freezer containers.
  6. Make sure to leave a half inch of space at top of container to allow for expansion in freezer.
  7. Allow jam to stay at room temperature for 30 minutes, then freeze or enjoy now!
